MEDITERRANEAN BEEF WRAPS with Red Bell Pepper Ancho Chili Jam


Pita Ingredients
1 pound flank steak
1 large yellow or red bell pepper
1 cup baby spinach leaves
1 cup crumbled feta cheese
1 small red onion, peeled, halved and thinly sliced
Salt & pepper
4 round pita breads, cut in half

Sauce Ingredients
½ cup extra virgin olive oil
½ cup E&V Red Bell Pepper Ancho Chili Jam
¼ cup balsamic vinegar
2 garlic cloves, chopped
½ teaspoon salt

Preparation & Cooking Instructions:
Preheat grill to medium/hot. Rub bell pepper with a little oil and grill until blackened. Place in a bowl and cover with plastic wrap to steam until cooled. Salt and pepper flank steak and grill to medium rare, let rest for 10 minutes and cut into strips. Cut, seed and peel bell pepper and slice into thin strips. In a blender or food processor puree sauce ingredients until smooth. On a large platter arrange pita ingredients, serve pita bread in a basket and red pepper sauce on the side. Serves 4
