SWEET POTATO PUREE (Mandarin Pumpkin Marmalade)

3 pounds sweet potatoes, peeled and cut into chunks
4 tablespoons butter
1/3 cup heavy whipping cream
1 jar E&V Mandarin Pumpkin Marmalade
2 teaspoons sea salt

Preparation & Cooking Instructions:
Boil sweet potatoes until tender with a fork. Drain water and mash sweet potatoes with masher or potato ricer. Add butter, cream, E&V Mandarin Pumpkin Marmalade and salt. Stir until butter is melted and ingredients are thoroughly blended. Serves 8
