EGG & SMOKED SALMON TACOS with Red Bell Pepper Ancho Chili Jam

Per Taco:

2 eggs, 1 oz smoked salmon, 1/2 tbls chopped red onion, 2 slices avocado, tsp chopped basil, tablespoon E&V Red Bell Pepper Ancho Chili Jam, corn tortilla.

Scramble eggs and smoked salmon. Toast corn tortilla and fill with eggs, top with avocado, onion, E&V Red Bell Pepper Ancho Chili Jam and basil. Enjoy!
