BRUSSELS, MUSHROOM, BACON & BLUE with Spicy Apple Garlic Jam

14 oz Brussels sprouts, cut in half

4 strips bacon, cut into strips

8 oz Crimini mushrooms, sliced

1 small shallot, peeled and sliced, about a 1/2 cup

2 tablespoons extra virgin olive oil

E&V Spicy Apple Garlic Jam

1 or 2 tablespoons Blue cheese crumbles

Cooking instruction & Preparation:

In a large skillet cook bacon until done but soft. Remove from skillet and drain on paper towel. Remove bacon grease from skillet and add olive oil. Over medium heat cook Brussels sprouts until slightly soft, about 5 minutes. Add mushrooms, shallot and bacon. Continue cooking until all of the ingredients are cooked and soft. Remove from heat and add desired amount of E&V Spicy Apple Garlic Jam. Toss and top with crumbled blue cheese.
