PORK CHOPS, BLUE CHEESE MASHED POTATOES & SPINACH (Honey Pear Vinaigrette)

Ingredients:
1 pound russet potatoes, peeled and cut into cubes
8 ounces blue cheese
1 cup whole milk
4 pork chops
8 cups spinach leaves
6 tablespoons E&V Honey Pear Vinaigrette
Salt & pepper
Olive oil

Preparation & Cooking Instructions:
In a medium pan boil potatoes until tender, drain and mash potatoes with blue cheese, milk, salt and pepper to taste. Preheat a grill or skillet and cook pork chops until desired doneness. In a large skillet heat 2 tablespoons of olive oil and sauté spinach until slightly wilted.
Plate mashed potatoes, top with pork chops, spinach and drizzle with E&V Honey Pear Vinaigrette. Serves 4
