BANANA CARAMEL CREAM BISCUITS (Caribbean Banana Caramel Finishing Sauce)


1/2 pint whipping cream, chilled
1/2 teaspoon vanilla extract
8 ounces E&V Caribbean Banana Caramel Finishing Sauce
4 medium bananas, ripe but not mushy
4 tablespoons butter
1/4 cup brown sugar
6 cream biscuits, home made or store bought

Preparation & Cooking Instructions:
Combine whipping cream, vanilla extract and 3 tablespoons E&V Caribbean Banana Caramel Finishing Sauce in a bowl and whip until soft peaks form, cover and chill. Slice bananas about 1/2 inch thick. In a large skillet melt 2 tablespoons of butter over medium/high heat, lay 1/2 of the banana slices in a single layer in skillet and sprinkle with 1/2 of the brown sugar over slices. Cook uncovered for about 4 minutes per side, turning only once. The bananas should be caramelized but not burned. Repeat process with second batch of banana slices. Split short cakes in half and top with caramelized bananas, cream mixture and drizzle with extra E&V Caribbean Banana Caramel Finishing Sauce. Serves 6
