Pork tenderloin, about 1 lb 1 teaspoon sea salt ¼ teaspoon allspice ½ teaspoon smoked paprika 1 tablespoon extra virgin olive oil 9 oz Earth & Vine Provisions Island Mango Chutney Preparation: Preheat oven to 400 degrees. In a small bowl mix together sea salt, allspice and paprika, Pat dry tenderloin and rub spice mixture on pork. Heat oil in a large skillet over medium heat until hot but not smoking. Brown tenderloin on each side, about 1 ½ minutes per side. Transfer pork to a roasting pan and roast for 20 to 25 minutes until pork reaches 155 degrees F with a meat thermometer. Let stand for 5 minutes before slicing. Serve with Island Mango Chutney. Serves 4 to 6 Tressa’s Tip: Serve with steamed brown rice, fresh slices of red and yellow bell peppers and sautéed squash. |
