Ingredients: ½ cup rolled oats ½ cups walnuts, chopped ¾ cup whole wheat flour ¾ cup all-purpose flour ½ teaspoon salt 4 tablespoons unsalted cold butter, cut into pieces 1 large egg 2 tablespoons canola oil 1 teaspoon pure vanilla extract 9 oz Earth & Vine Provisions, Raspberry Cranberry Jam 3 cups cranberries, fresh or frozen
Preparation: Preheat oven to 400 degrees. In a food processor combine the oats and walnuts, process until nuts are finely chopped with some texture left. In a mixer fitted with the paddle attachment mix together oats, nuts, whole wheat flour, all-purpose flour and salt. On low speed add butter and mix until crumbly. In a separate bowl whisk together egg, oil and vanilla, increase speed on mixture to medium and add wet ingredients to dry ingredients. Mix until combined, scrapping down sides with a spatula if needed. Remove ¾ cup of mixture and set aside.
Spray a 9 x 13 inch baking dish with a non-stick spray and evenly spread mixture in pan, pressing down to create a crust.
In a sauce pan combine Raspberry Cranberry Jam and cranberries, cook over medium heat for about five minutes, until cranberries are soft and skin is slightly broken.
Spread fruit mixture over crust and smooth evenly with a spatula.
Sprinkle top with remaining dry mixture and bake at 350 degrees for 15 minutes. Turn oven down to 350 degrees and bake another 30 minutes.
Remove and let cool, cut into 10 bars.
