Ingredients: 2 lbs Yukon Gold potatoes ½ cup Earth & Vine Provisions Meyer Lemon Rosemary Marinade & Dressing 2 garlic cloves, crushed ¼ cup extra virgin olive oil 2 tablespoons fresh rosemary, chopped 1 tablespoon sea salt
Preparation: Preheat oven to 375 degrees. Cut potatoes into thin slices, a mandolin works best for even slices. Mix together Meyer Lemon Rosemary Marinade, garlic, olive oil, rosemary and salt. Toss potatoes in mixture and layer potatoes in a ceramic baking dish, pouring remaining marinade over potatoes. Cover potatoes with foil and bake for 30 minutes, remove foil and continue baking for 30 to 40 minutes or until potatoes are tender.
