Ingredients: ½ lb sushi grade Ahi tuna, cut into 1.5” x 1.5” logs 2 tablespoons black sesame seeds 2 teaspoons fresh cracked black pepper 1 teaspoon sea salt 1 tablespoon olive oil ½ English cucumber, washed and sliced into 16 slices 9 oz Earth & Vine Provisions Mango Horseradish Seafood Sauce 1 lime for zest garnish Cooking Instructions: Mix together sesame seeds, pepper and salt. Place sesame seed mixture on a plate and roll Ahi logs in seeds until well coated, gently pressing seeds into tuna. In a non-reactive skillet heat oil over high heat until hot. Place Ahi in skillet and sear each side for 1 minute, keeping center rare. Remove from skillet and let cool. With a very sharp knife, slice logs into 1/8” thick slices, about 16 slices. Place Ahi slices on cucumber slices and top with a ½ teaspoon of Mango Horseradish Seafood Sauce. Garnish with lime peel and serve on a platter as an appetizer. |
