Ingredients: 2 ½ lbs sweet potatoes
Preparation: Peel sweet potatoes and cut in half, cut halves into thick cut fries. In a 3 quart stainless steel pot, large frying pan or small fry Daddy heat oil to 375 degrees. Fry sweet potato fries until golden and crisp in 3 batches. Remove and drain on paper towels, sprinkle immediately with paprika powder and salt to taste. Mix together Papaya Orange Habanero Preserve and Dijon mustard and serve with hot fries. |
