LEMON FENNEL SLAW

Ingredients:
1 ½ lb fennel (sometimes called anise)
¼ cup mayonnaise
2 tablespoons Lemon Dill Mustard
½ tablespoon cider vinegar
½ teaspoon fresh cracked black pepper
2 teaspoons sugar
Pinch of salt

Preparation:
In a medium sized bowl mix together all ingredients together except for fennel and set aside.

Trim fennel tops flush with bulbs and discard stalks. Rinse fennel bulbs and cut in half from the top down and remove core. Finely slice fennel on a mandoline slicer or by hand. Toss fennel with dressing and chill for at least one hour to marry flavors.  Excellent served with grilled or baked chicken or meat.
