CUBAN MOJO DEVILED EGGS

Ingredients:

12 hard boiled eggs

1/2 cup mayonnaise

1/4 cup Earth & Vine Provisions Cuban Mojo Mustard

1/2 cup cooked bay shrimp, chopped

2 tablespoons red onion, minced

1/2 cup green olives with pimentos, minced

Garlic salt and fresh cracked pepper to taste

Paprika and parsley for garnish


     Cooking Instructions:

Slice hard boiled eggs in half and place yolks in a medium sized bowl, add mayonnaise, Cuban Mojo Mustard, bay shrimp, red onions, olives, garlic salt and pepper to taste. Mix together until well blended and smooth. Fill egg halves with mixture and chill for an hour or longer to let flavors blend. Just before serving dust with paprika and chopped parsley.

These are not your Mom's deviled eggs. I adapted this recipe from a traditional Cuban cook book, they're full of flavor and delicious.
