GOAT CHEESE & APRICOT PASTRY CUPS

Ingredients:

1 sheet of puff pastry dough from a 17.3oz package, or home made

4 oz goat cheese

2 tablespoons chopped pistachios

9 oz Earth & Vine Provisions Apricot Chili Pepper Jam

1 non-stick mini muffin pan

 

Cooking Instructions:

Preheat oven to 400 degrees. Roll out pastry square to 12" x 12" square; cut into 3" squares, you will have 16 squares. 

Press pastry squares into muffin tin holes, pressing around sides and crimping dough. 

Bake at 400 degrees for 10 minutes or until golden brown. Remove from oven and let cool. 

Bring goat cheese to room temperature and divide into 16 balls. 

Press goat cheese balls into cooled pastry cups and top with a dollop of Apricot Chili Pepper Jam and sprinkle with chopped pistachios.
