INGREDIENTS:
1 Can corn kernels, drained and rinsed
1 Can black beans, drained and rinsed
1 Large avocado, peeled and diced
1 Large tomato, diced
½ Medium red onion, peeled and diced
½ Cup feta cheese
½ Cup Earth & Vine Provisions Key Lime Kiwi Tangerine Marinade
1 Cup or more broken corn chips for topping
PREPARATION:
Toss all ingredients in a medium sized bowl and top with broken corn chips.
Serves 6 to 8 as a side salad or use as a topping for tostados or tacos.
