Ingredients: 2 cups fresh grilled corn or 1 can corn kernels, drained and rinsed 1 can black beans, drained and rinsed 1 large avocado, peeled and diced 1 large tomato, diced ½ medium red onion, peeled and diced ½ cup feta cheese ½ cup Earth & Vine Provisions Key Lime Kiwi Tangerine Marinade 1 cup or more broken corn chips for topping or whole for scooping
Cooking Instructions: Toss all ingredients in a medium sized bowl and top with broken corn chips or serve whole corn chips on the side for scooping and dipping. Serves 6 to 8 as a side salad. Also makes a great topping for tostados or tacos or a perfect dip with tortilla chips.
