INGREDIENTS: 3 Tablespoons extra virgin olive oil 2 Center cut pork chops, 1 inch thick 4 Tablespoons flour seasoned salt & pepper ¾ Cup Earth & Vine Provisions Island Mango Chutney ¼ Cup Earth & Vine Provisions Cuban Mojo Mustard ½ Cup chicken stock Sea salt & fresh ground pepper to taste
PREPARATION: Heat oil in a medium nonstick skillet. Coat pork chops with flour. Add pork chops to heated skillet and brown over medium-high heat, about 3 minutes per side. Remove chops. Add Earth & Vine Provisions Island Mango Chutney , Earth & Vine Provisions Cuban Mojo Mustard and chicken stock to skillet and scrape up brown bits. Reduce heat to low, return pork chops to skillet and cook, covered over low heat for 15 minutes or until done, turning chops over once during cooking. Serve with a citrus slaw and rice.Serves 4
