INGREDIENTS: 4 Salmon steaks, one inch thick Olive oil for cooking 1/3 Cup Earth & Vine Provisions Strawberry Blueberry Jam 2 Tablespoons heavy whipping cream 1 Tablespoon brandy Salt & Pepper to taste
PREPARATION: Rub steaks with olive oil, salt and pepper. Grill 4 to 5 minutes each side, or until done. In a non-reactive skillet heat Earth & Vine Provisions Strawberry Blueberry Jam , heavy whipping cream and brandy over medium high heat and reduce sauce by 20%. Place salmon steaks on plates and spoon berry reduction sauce on top. Serve with cinnamon flavored couscous. Serves 4
