INGREDIENTS: 1 lb Ground chicken ½ Cup Italian bread crumbs Handful parsley leaves, finely chopped ¼ Cup roasted red peppers 3 Whole scallions, finely cut 1 Egg, room temperature 1 Tablespoon grill seasoning 12 oz bottle Earth & Vine Provision SPICY APRICOT BOURBON BARBECUE SAUCE
PREPARATION: Place chicken in a bowl with all ingredients except for Earth & Vine Provisions SPICY APRICOT BOURBON BARBECUE SAUCE , mix well. Form meat into bite size nuggets, place on a cookie sheet lined with non-stick foil. Bake about 15 minutes, until evenly browned, turning as needed. A minute or two before removing bites from oven, spoon some Earth & Vine Provisions SPICY APRICOT BOURBON BARBECUE SAUCE on each nugget. Serve extra sauce in a small bowl for dipping nuggets with party picks. Yields about 16 bites. To make your own ground chicken simply place skinless, boneless chicken breasts in a food processor and pulse until ground.
