Ingredients:
1 lb ground chicken ½ cup Italian bread crumbs Handful parsley leaves, finely chopped ¼ cup roasted red peppers 3 whole scallions, finely cut 1 egg, room temperature 1 tablespoon grill seasoning 12 oz Earth & Vine Provision Spicy Apricot Bourbon Barbecue Sauce
Cooking Instructions:
Place chicken in a bowl with all ingredients except for Spicy Apricot Bourbon Barbecue Sauce and mix well.
Form meat into bite size nuggets, place on a cookie sheet lined with non-stick foil. Bake about 15 minutes, until evenly browned, turning as needed. A minute or two before removing bites from oven, spoon Spicy Apricot Bourbon Barbecue Sauce on each nugget. Serve extra sauce in a small bowl for dipping nuggets with party picks. Yields about 16 bites.
Tressa's Tip: To make your own ground chicken, simply place skinless, boneless chicken breasts in a food processor and pulse until ground, or use a hand meat grinder.
