INGREDIENTS: 3 oz Earth & Vine Provisions Spiced Fig Pear Fruit Butter 1 Large pre-baked pizza round, such as Boboli 4 oz Crumbled Gorgonzola cheese 3 oz Pancetta or bacon 1 Medium yellow onion, thinly sliced 3 Large fresh figs, cut into thin wedges Olive oil
PREPARATION: Preheat oven to 450 degrees. Cook pancetta or bacon until crispy, drain on a paper towel and set aside, when cool crumble. Caramelize onions in pancetta drippings over medium/high heat, when caramelized set aside in skillet. Brush pizza bread with olive oil and evenly spread Earth & Vine Provisions Spiced Fig Pear Fruit Butter over bread. Top with crumbled pancetta, gorgonzola cheese, caramelized onions and sliced figs, bake pizza on a pizza stone or pan for 15 to 18 minutes, or until cheese is hot and melted and crust is slightly brown. Serve with a salad for dinner or slice thin for an appetizer.
